Cinnamon Crumble Cake 🤦🏼♀️
Yesterday I thought it’d be fun to do a little baking with Ruby.
I am perhaps an even worse baker than I am a cook, so I begged, BEGGED to make banana nut muffins from a box of muffin mix I had in the cabinet. Ruby was not having it. We debated each other for a solid five minutes. She was proposing her own improvised recipe of sugar, tomatoes, and vanilla extract, so this cinnamon crumble cake from a recipe book I have seemed like a good compromise.
The short story is the cake did not bake.
The funniest thing about this whole story is that a different disaster had already taken a comfortable lead before I put the cake in the oven when I forgot to add the cinnamon.
Yes, I forgot to add the cinnamon to my cinnamon crumble cake and that’s not even the thing that ended up ruining it!
….
Let’s just move on.
I checked the cake multiple times as the baking time kept rising and it still did not seem done. I finally called it when it was like 20 minutes past its time. I let it cool, and then I dug in (see attached video documentation.) Completely raw in the middle. The corners/outsides were baked through, but just a sloppy mess in the middle.
This has happened to me before—with other recipes, with different ovens—where the middle just does not get done, at all.
Am I mixing something wrong? Am I using wrong ingredients, like a wrong type of flour? (Are there different types of flour?) Is something wrong with my oven(s)? Did an old lady put a curse on me somewhere along the way, Disney movie style?
Well, that seems like a good place to sign off for today.
