On Monday night I made chicken tacos, and then used the leftovers for quesadillas on Tuesday. Making a real dinner in general feels like a win, but when I have enough leftovers for a second dinner—I’m basically a superhero.

I used a recipe from one of the first cookbooks ever gifted to me (by my mom), First Real Kitchen Cookbook. It was a pretty basic recipe, but I still managed to have a few questions.

Things I Googled

I ended up using half smoked paprika and half cayenne pepper. I was modest with the spice since I’m cooking for a toddler.

If you continue to read about my kitchen adventures, you will soon discover that things that you might expect to be common sense are not at all common sense for me. In fact, I feel confident in saying that most of my common sense flies out the window when I step into the kitchen.

So I wanted to make sure I layered and timed things correctly (i.e. tortilla, cheese, filling, etc.) Yet, even with the extensive research I did, I ended up making the apartment super smoky. Since I made two quesadillas in two separate rounds, I had to melt butter in the pan twice. I think because the pan was already hot for the second one, the butter started to burn pretty fast? So I had to scrap that pan and get another one dirty, which was annoying. Maybe I should have just used oil instead?

Anyways, both meals tasted pretty good, but I still have a ton of leftovers. I’m not sure I can repurpose them for a third night.
